Do you keep the potatoes in the fridge waiting for them to last forever? It is possible that they do not get bad, but the price to pay is that the cold does not feel good at all and greatly alters its flavor, boosting sugars.
In the refrigerator, they become sweet potato ice cream instead of potatoes. Much better to store them in a cloth bag, dark enough to protect the potatoes from light.
